Recipe of the Week: Grilled Veggies

If you’re struggling to eat your vegetables, this recipe will allow you to eat your favorite animal protein while also consuming their counterparts, for a healthy balanced meal.

Ingredients:

Avocado oil

Salt

Pepper

Asparagus

Bok choy

Red onion

Sliced potatoes

Eggplant

Green garlic

Summer squash

Directions:

Clean the vegetables and make sure to dry them so as not to steam them out while grilling.

Cut, slice, and dice the vegetables.

Place all ingredients into a pan and toss with a bit of cooking oil, salt, and pepper.

Add your favorite protein such as marinated steak, salmon, BBQ chicken and you have an easy, healthy summer meal.

Additional Options:

Hard-boiled egg

Crispy bacon

Avocado

Apple

Cheese

Seeds

Dried fruits
